Frank Sinatra’s Mother’s Marinara Sauce

½ cup EVO
1 small onion
3 garlic cloves
1 (28-oz.) can crushed tomatoes with puree
1 sprig fresh oregano
1 tsp. dried basil
1 tsp. Italian seasoning

1.)   Heat the oil at medium-high in a saucepan. Finely chop the onion, and cook about 5 minutes, until tender. Finely chop or press the garlic, add it, and stir for about 2 more minutes. Add the tomatoes plus their puree, bring it to a simmer, and cook for 20 minutes.
2.)   Finely chop the oregano, basil, and Italian seasoning, salt and pepper to taste, stir, and continue to cook for 15 minutes.
